Ingredients
  

  • 1 pound sweet potatoes
  • 1 ripe plantain
  • 1 teaspoon ground coriander
  • 1 teaspoon ground cumin
  • 3 cloves garlic, grated
  • ½ cup whole wheat pastry flour or all purpose flour
  • ½ lime juice
  • 1 handful fresh cilantro, finely chopped
  • salt to taste
  • pepper to taste

Instructions
 

  • Preheat the oven to 400°F (200°C).
  • Peel and dice the sweet potatoes and plantain.
  • Boil the sweet potatoes until tender, about 15 minutes.
  • In a mixing bowl, combine boiled sweet potatoes, diced plantain, garlic, coriander, cumin, lime juice, and cilantro.
  • Mash the mixture until smooth and then incorporate the flour, salt, and pepper.
  • Form the mixture into small bites and place them on a baking sheet.
  • Bake for 20 minutes or until golden brown.
  • Serve warm as an appetizer or snack.
