Dressing

  • 2 tablespoons creamy peanut butter
  • 2 tablespoons Asian chile-garlic paste or sambal oelek
  • 1.5 tablespoons soy sauce or tamari
  • 1.5 tablespoons freshly squeezed lime juice (about 1 medium lime)
  • 3 cloves garlic minced
  • 1 teaspoon red pepper flakes for garnish (optional)

Salad

  • 2 medium English cucumbers (about 12 ounces each), sliced crosswise into ¼-inch thick rounds
  • 0.5 cup fresh cilantro (coarsely chopped, about ½ small bunch)
  • 0.5 cup salted, roasted peanuts (coarsely chopped)

Preparation

  • Whisk 2 tablespoons creamy peanut butter, 2 tablespoons Asian chile-garlic paste, 1 tablespoon plus 1 ½ teaspoons soy sauce, 1 tablespoon plus 1 ½ teaspoons lime juice, 3 minced garlic cloves, and 1 teaspoon red pepper flakes if using together in a large bowl. The dressing will be on the thicker side.
  • Add 2 sliced medium English cucumbers, ½ cup coarsely chopped fresh cilantro, and ½ cup coarsely chopped salted, roasted peanuts. Toss together with a flexible spatula until all the cucumbers are evenly coated with the sauce. Garnish with red pepper flakes if desired. This salad is best eaten immediately.
