Ingredients
  

Dough Ingredients

  • 1.5 cups warm water around 100°F (38°C)
  • 2.25 teaspoons instant or active dry yeast (1 standard packet)
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon salt
  • 1 tablespoon unsalted butter melted and slightly cool
  • 3.75-4 cups all-purpose flour plus more for hands and work surface

Baking Soda Bath

  • 0.5 cups baking soda
  • 9 cups water

Optional for Serving

  • spicy cheese sauce or your favorite mustard

Instructions
 

Dough Preparation

  • Whisk warm water, yeast, and sugar together in a bowl. Cover and let sit for 5 minutes until foamy.
  • Add salt, melted butter, and 3 cups of flour. Beat on low for 1 minute. Add remaining flour if needed until dough forms.
  • Knead for 5 minutes until dough is soft and slightly tacky. Allow to rest, covered, for 10-30 minutes.

Shaping and Boiling

  • Preheat oven to 400°F. Cut dough into 6 pieces and roll into 20-inch ropes. Cut into 1.5 – 2 inch pieces.
  • Boil water and baking soda in a large pot. Boil the pretzel bites for 10-15 seconds.
  • Place on baking sheets, sprinkle with coarse salt, and bake for 15 minutes until golden brown.

Storage

  • Store leftovers at room temperature for up to 3 days. Reheat in microwave or oven.

Notes

These pretzel bites are best served warm and can be dipped in cheese sauce or mustard.
