Ingredients
  

Coating

  • 60 g cornflour (cornstarch)
  • 1 tablespoon table salt
  • 1.25 tablespoon ground black pepper
  • 1 tablespoon Chinese five-spice

Chicken and Vegetables

  • 6 skinless chicken thigh fillets quartered
  • 240 ml vegetable oil for frying
  • 1 onion peeled and chopped into large chunks
  • 1 red chilli chopped into small pieces
  • 1 green chilli chopped into small pieces
  • 2 garlic cloves peeled and minced
  • 3 spring onions (scallions) roughly chopped

Instructions
 

Preparation

  • Mix together the cornflour, ¾ tablespoon of salt, 1 tablespoon of black pepper, and the Chinese five-spice.
  • Sprinkle over the chicken thigh fillets and toss together to coat.
  • Heat vegetable oil in a frying pan over high heat.
  • Add the chicken to the oil a piece at a time and fry for about 5-7 minutes, turning until golden brown.
  • Transfer the cooked chicken to a plate lined with kitchen paper.
  • In a separate pan, heat reserved oil and add chopped onion, red and green chillies, the remaining salt, and pepper.
  • Fry for about 2-3 minutes until the onion softens.
  • Add minced garlic and chopped spring onions, then fry for a further minute.
  • Add the cooked chicken to the frying pan and toss everything together for 1 minute.
  • Turn off the heat and serve.

Notes

This recipe tastes best when cooked and eaten right away to retain crunch. It can be reheated but may lose some texture.
