Step-by-step Instructions

  • Let the beef filet rest at room temperature for about 30 minutes. Season the meat generously with salt and pepper.
  • Heat 2 tablespoons of olive oil in the pan over medium-high heat. Sear the beef filet for 3-4 minutes on each side.
  • Remove the beef filet from the pan and let it rest on a plate. Add chopped garlic and sauté for 1-2 minutes.
  • Pour in the cream and Dijon mustard, and stir well.
  • Add dried thyme and let the mixture simmer on low heat until slightly thickened.
  • Preheat the oven to 200 °C. Roast the vegetables with olive oil, salt, and pepper for 20-25 minutes.
  • Slice the beef filet and serve with the sauce and vegetables.
