Ingredients
  

Tomato Topping

  • ½ cup grape tomatoes, diced finely
  • 1 tablespoon balsamic vinegar
  • 2 tablespoons finely diced red onion
  • 2 tablespoons fresh basil, sliced
  • 2 cloves garlic, minced
  • ¼ teaspoon kosher salt more to taste

Chicken

  • salt and pepper
  • 4 pieces boneless skinless chicken breasts see Note
  • 1 tablespoon olive oil more if needed
  • ¼ cup basil pesto
  • 4 slices mozzarella cheese
  • balsamic glaze
  • shredded Parmesan optional

Instructions
 

Preparation

  • In a small bowl, combine the tomatoes, balsamic vinegar, red onion, fresh basil, garlic, and salt. Let chill in the fridge.
  • Season chicken with salt and pepper. If time allows, marinate the chicken in a little balsamic vinegar. Cook the chicken breasts in a large skillet with olive oil over medium heat for about 4-6 minutes per side until done.
  • Add 1 tablespoon of basil pesto on top of each chicken breast and place a slice of mozzarella on top. Cover to melt the cheese. Remove from heat.
  • With a slotted spoon, add the tomato mixture on top (excluding the liquid). Drizzle with balsamic glaze and sprinkle with Parmesan if desired.

Notes

The chicken breasts should be thin. If they are thick, slice them in half lengthwise. I use two Costco chicken breasts halved for this recipe. Tenderloins can also be used if desired.
