Sausage and Rice

  • 1 pound smoked sausage, sliced
  • 1 cup long-grain rice
  • 1 cup barbecue sauce your choice
  • 2 cups chicken broth
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon paprika
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 1 cup frozen corn optional
  • 2 green onions sliced for garnish

Cooking Steps

  • In a large skillet, sauté sliced sausage until browned. Remove and set aside.
  • Cook onion and bell pepper until softened, then add garlic.
  • Stir in rice, paprika, salt, and pepper until coated.
  • Add barbecue sauce, chicken broth, sausage, and corn if using.
  • Cover, simmer on low for 20 minutes until rice is tender.
  • Turn off heat, rest 5 minutes. Fluff with fork, garnish with green onions, and serve.

Notes

Use day-old rice for best texture if reheating. Swap smoked sausage with turkey or chicken sausage for a lighter version. Freeze without rice and add fresh rice when reheating for best results.
