Noodles and Sauce

  • 8 oz lo mein noodles See notes
  • 1 lb lean ground beef like 90/10 or 93/7
  • ½ cup beef broth
  • cup low sodium soy sauce
  • ¼ cup brown sugar
  • 2 tablespoons hoisin sauce
  • 1 tablespoon cornstarch
  • 5 cloves minced garlic
  • 2 teaspoons minced ginger
  • ½ teaspoon black pepper
  • 1 tablespoon high-heat cooking oil like avocado oil
  • 3 green onions thinly sliced, whites and greens separated

Cooking Instructions

  • Boil the noodles according to package instructions, but reduce the cooking time by about 1-2 minutes. Drain noodles and set aside.
  • Preheat griddle or large skillet to medium heat.
  • While the noodles are boiling, prepare the sauce. Mix beef broth, soy sauce, brown sugar, hoisin sauce, black pepper, and cornstarch, then mix in about 75% of the ginger and garlic, reserving the rest for later.
  • When hot, begin cooking the ground beef in small chunks. Allow it to cook untouched for 2-3 minutes.
  • When the beef is halfway cooked, add the whites of the green onions, then chop and sauté together.
  • Remove beef from the heat when almost cooked through.
  • Add oil to the griddle or skillet, then add the remaining garlic and ginger to toast briefly.
  • Add the drained noodles to incorporate the garlic and ginger, then spread the noodles and cook untouched for about 1-2 minutes.
  • Add the cooked ground beef and sauté briefly, then slowly pour in the prepared sauce.
  • Toss everything together, ensuring the sauce coats the noodles. Sauté for an additional 2-3 minutes.
  • Sprinkle with the tops of the green onions, and serve immediately.

Notes

***Noodle choice*** – Substitute regular linguini, fettuccini, or spaghetti noodles, or try udon noodles. ***Spice it up*** – Add red pepper flakes or sriracha for heat. ***Add vegetables*** – Incorporate stir-fry vegetables and adjust sauce accordingly.
