Ingredients
  

Carrots

  • 2 pounds medium carrots peeled and cut into 2-inch pieces
  • 3 cloves garlic minced
  • 3 tablespoons unsalted butter
  • 1.5 tablespoons honey
  • 1 teaspoon kosher salt
  • 0.25 teaspoon freshly ground black pepper
  • 0.5 small lemon juiced
  • Chopped fresh parsley leaves for garnish (optional)

Cooking Instructions

  • In a large pot, bring water to a boil and add the carrots. Cook for about 5 minutes until slightly tender.
  • Drain the carrots and return them to the pot. Add minced garlic, unsalted butter, honey, kosher salt, and black pepper.
  • Toss to coat evenly and cook on medium heat for about 20-25 minutes until glazed, stirring occasionally.
  • Remove from heat, add lemon juice, and garnish with chopped parsley before serving.

Notes

For best results, use fresh carrots and adjust the sweetness to taste by adding more or less honey.
