Breads and Dairy

  • 8 slices white bread ⅔ to ¾" thick
  • 1 cup milk (240 ml)
  • 2 large eggs
  • 2 egg yolks
  • 1 tablespoon brown sugar or granulated sugar
  • 1 teaspoon pure vanilla extract
  • ¾ teaspoon cinnamon
  • teaspoon nutmeg
  • ¼ teaspoon kosher salt
  • 2 tablespoons unsalted butter
  • ¼ cup powdered sugar
  • 1 cup pure maple syrup (240 ml)

Preparation

  • Dry the Bread - Set oven to 300ºF (149ºC) and place slices on a wire rack on a baking sheet for 10-14 minutes until dry but not browned.
  • Make the Custard - Whisk together milk, eggs, egg yolks, brown sugar, vanilla, cinnamon, nutmeg, and salt in a large shallow bowl.
  • Dip the Bread - Soak bread for 15 to 20 seconds on each side and transfer to a separate baking sheet.
  • Fry the Bread - Heat a pan over medium-low, melt ½ tablespoon of butter, and cook bread until golden on both sides.
  • To Serve - Sprinkle powdered sugar on top and serve with maple syrup.

Notes

Refrigerate for up to 3 days, freeze for up to 3 months. Reheat using a toaster oven on the lowest setting until hot.
