Ingredients
  

  • 1 seedless watermelon
  • 2 limes juiced and zest
  • ½ teaspoon salt
  • 1 teaspoon chili seasoning
  • ¼ cup cotija cheese crumbled

Instructions
 

  • Cube watermelon into 1 inch pieces.
  • In a bowl add the watermelon, lime juice, kosher salt and chili powder. Toss to coat and refrigerate for at least 1 hour, covered.
  • Crumble cotija cheese over salad and the zest from 1 lime before serving.

Notes

Using a small round watermelon is recommended, but extra cheese can be added for large, oblong ones. Season to taste.
