Ingredients
  

  • 1 can chickpeas (garbanzo beans) 15 oz.
  • 1 tablespoon olive oil
  • ½ teaspoon garlic powder
  • ½ teaspoon grated lemon zest
  • Sea salt and freshly ground pepper to taste
  • 2 tablespoon grated Parmesan cheese use Vegan Parmesan for Vegan option
  • additional grated Parmesan cheese for garnish optional

Instructions
 

  • Preheat oven to 375F. Line a large baking sheet with parchment paper. Set aside.
  • Drain and rinse chickpeas. Pat chickpeas with paper towels to dry and remove any loose skins.
  • In a large bowl toss chickpeas with oil, garlic powder, lemon zest and salt & pepper and Parmesan cheese.
  • Arrange in a single layer on baking sheet and bake until crisp and light brown, approximately 45-50 mins, tossing halfway through cooking. Remove from oven and sprinkle with additional grated Parmesan cheese if desired.

Notes

Parmesan cheese can be added prior to roasting for extra depth of flavor, or added after cooking for a lighter alternative.
