Ingredients
  

Pasta

  • 150 g pasta of your choice 100g dried per person

Garlic

  • 2 whole heads garlic

Oils and fats

  • 2 tablespoon olive oil
  • 30 g butter cubed

Seasonings

  • 0.5 teaspoon pepper

Dairy

  • 1 cup cream single or heavy
  • 50 g parmesan finely grated

Citrus

  • 2-3 tablespoon freshly squeezed lemon juice
  • 1 whole lemon for zest

To serve

  • extra zest
  • dried paprika flakes optional

Cooking Steps

  • Preheat your oven to 200°C (400°F).
  • Prepare your garlic bulbs by removing the outer layers and cutting off the top horizontally.
  • Drizzle the garlic tops with olive oil, wrap in foil, and roast in the oven for about 45 minutes until soft and caramelized.
  • Let garlic cool, then squeeze out the cloves to create a smooth paste.
  • Cook pasta in well-salted boiling water.
  • Melt butter in a frying pan over medium heat until it foams.
  • Add pepper, stir, then add garlic paste and whisk.
  • Add cream and whisk, maintaining a gentle simmer.
  • Incorporate lemon juice and zest, whisking until combined.
  • Add parmesan in batches, whisking to melt between additions.
  • Simmer for a couple of minutes until the sauce thickens slightly.
  • Add cooked pasta and ¼ cup of pasta water to the sauce, and let it bubble for a minute.
  • Adjust consistency by adding more pasta water if necessary.
  • Top with extra lemon zest and paprika flakes before serving.

Notes

Adjust garlic and lemon to your taste. For extra flavor, feel free to add more lemon juice or use chili flakes if paprika flakes are unavailable. This sauce should adequately coat 3 portions of pasta.
