Ingredients
  

For the banana bread

  • 2 to 3 bananas very ripe, peeled about 1 ¼ to 1 ½ cups mashed
  • cup unsalted butter, melted or salted
  • ½ teaspoon baking soda
  • a pinch salt
  • ¾ cup sugar use ½ cup for less sweet, 1 cup for more sweet
  • 1 large egg, beaten
  • 1 teaspoon vanilla extract
  • 1 ½ cups all-purpose flour

For the cream cheese filling

  • 225 grams cream cheese at room temperature
  • 1 large egg
  • ¼ cup sugar
  • 2 tablespoons flour

Instructions
 

Preparation

  • Preheat the oven to 175 °C (350 °F) and grease a 10 x 20 cm loaf pan.
  • In a mixing bowl, mash the ripe bananas with a fork until smooth. Stir in the melted butter.
  • Mix in baking soda and salt. Add sugar, beaten egg, and vanilla extract. Stir in flour.
  • In another bowl, beat together all cream cheese filling ingredients using an electric mixer.
  • Pour half of the banana bread batter into the loaf pan. Spread half of the cream cheese mixture on top, then layer with the remaining batter and cream cheese mixture.
  • Use a butter knife to swirl the cream cheese into the banana bread batter.
  • Bake for 55 to 60 minutes or until a toothpick inserted in the center comes out clean.
  • Let the banana bread cool for a few minutes in the pan, then turn it out onto a wire rack to cool completely.

Notes

If the top begins to brown too much before the center is cooked, cover it with aluminum foil.
