Ingredients
  

Meat and Cheese

  • 8 slices ham
  • 8 oz Swiss cheese sliced or shredded
  • 4 pieces boneless skinless chicken breasts about 2 pounds
  • salt and freshly ground black pepper

Coating and Sauce

  • 3 cups corn flakes cereal crushed (or substitute breadcrumbs)
  • 6 Tablespoons butter melted
  • 1 cup mayonnaise
  • 1-2 teaspoons yellow mustard to taste

Preparation

  • Pat the chicken dry with paper towels and cut each chicken breast in half horizontally to create two chicken breast halves.
  • Place the chicken breast halves between two sheets of plastic wrap and use a meat mallet or rolling pin to pound them thin.
  • Top each chicken piece with a slice of ham and a handful of shredded cheese, then roll tightly.
  • Wrap the rolled chicken tightly in plastic wrap and refrigerate for at least 30 minutes.
  • Preheat oven to 400°F, unwrap chicken, and season with salt and pepper.
  • Pulse cornflakes in a food processor into fine crumbs and melt butter in a separate dish.
  • Dip chicken bundles in melted butter, then into cornflake crumbs, and place on a greased baking sheet.
  • Bake for about 30 minutes, or until chicken is cooked through.
  • Mix mayo and mustard together for the sauce, adjusting mustard to taste.

Notes

Cheese can be swapped for different varieties. Cornflakes can be substituted with breadcrumbs or gluten-free options. Refrigerate wrapped chicken for up to one day or freeze for up to 3 months.
