Ingredients
  

Crust

  • 1 cup Graham cracker crumbs Premade or homemade
  • ½ cup melted butter
  • 2 tablespoon sugar

Cheesecake Filling

  • 16 oz cream cheese Full-fat and softened
  • ¼ cup all-purpose flour
  • 1 cup sugar
  • 1 tablespoon vanilla extract Use pure extract
  • 3 large eggs Room temperature

Toppings

  • 2 medium ripe bananas Firm with brown spots
  • ¼ cup brown sugar Dark brown preferred
  • ½ cup dark rum Or light rum
  • ¼ cup water

Instructions
 

Crust Preparation

  • Combine graham cracker crumbs with melted butter and sugar until it resembles wet sand. Press firmly into the bottom of a springform pan.
  • Place in a preheated 350°F oven for 8-10 minutes until golden and fragrant.

Filling Preparation

  • Beat softened cream cheese on medium speed until smooth, about 2-3 minutes.
  • Gradually add sugar and flour, beating until fluffy. Add vanilla and mix.
  • Add eggs one at a time on low speed to minimize air incorporation.
  • Pour batter into the crust and bake for 50-60 minutes at 350°F.
  • Turn off the oven, crack the door, and let cool for 1 hour.

Bananas and Glaze

  • Melt butter in a skillet, then add banana slices and sprinkle with brown sugar. Caramelize for 2-3 minutes on each side.
  • Combine rum, brown sugar, and water in a saucepan. Simmer for 2-3 minutes until slightly thickened.

Assembling the Dessert

  • Once cooled, arrange caramelized bananas on top of the cheesecake and drizzle with warm rum glaze.

Notes

Ensure cream cheese is softened for the best texture. Use ripe bananas for optimal caramelization.
