You may use corn tortillas instead of flour tortillas. If using corn tortillas, fry them slightly in the vegetable oil before assembling to make them more pliable. Refried pinto or black beans can be used, and straight out of a can is totally fine. Monterey Jack cheese melts beautifully, but Cheddar or Pepper Jack also works.
